Description

Smooth, mild, and versatile bean paste ideal for wagashi, flower piping, and more

Shiro-an (白あん / 춘설 백앙금) is a traditional sweetened white bean paste widely used in Japanese wagashi and Korean desserts. Made from carefully cooked and mashed white kidney beans (such as ), it has a light colour and mild flavour, making it a versatile base for both sweet and decorative applications.

Unlike red bean paste (anko), Shiro-an allows other flavours—such as matcha, yuzu, or fruit purées—to shine when blended. Its neutral tone also makes it the ideal choice for bean paste flower piping, nerikiri, and other intricate confectionery work.

Key Features:

  • Smooth, sweetened white bean paste made from white kidney beans

  • Traditional base for Japanese wagashi and Korean confections

  • Ideal for nerikiri, konashi, flower piping, and flavour infusions

  • Milder in taste than red bean paste (anko), with a creamy, refined texture

  • Naturally gluten-free and vegan-friendly

  • Product of South Korea

Storage Instructions:

After opening or repacking, store in an airtight container in the refrigerator. For longer-term use, the paste can be frozen and thawed gently in the microwave or at room temperature before use.
