Daily Bread is a premium organic bread flour made from 100% certified organic hard red spring wheat. Milled weekly in small batches by 1847 Stone Milling, it delivers a rich, full-bodied flavour and the high protein content needed to develop strength and elasticity in artisan breads.
With a protein level of approximately 13.5%, this flour creates doughs with excellent structure—perfect for sourdough, yeasted breads, and rustic pizza crusts. Because the flour is unbleached, unbromated, and stone milled with the bran and germ intact, it produces hearty loaves with a deep amber colour and exceptional taste.
Some bakers may add a tablespoon of vital wheat gluten per cup for a lighter crumb, but this flour performs beautifully on its own for robust, naturally flavoured breads.
