This Matfer stainless steel 1 3/8" (3.5cm) high bottomless ring is used for baking of various simple pastries, such as pastry shell or sponge cake, directly on cookie sheet. It can also be used to assemble entremet or layered sponge cakes with fillings.
Matfer rings are made seamlessly so that your creation is smooth on the side. Its smooth, rigid sides offer support for packaging, pouring and pressing.
